What's for dinner?


I decided that every once in while I am going to post a recipe. Either one of my old favorites or a new one. I really do like to cook and thought it would be fun to share! This is a pizza recipe that I grew up with, one my mom used to always make. You may be asking, "why make pizza when you can get one at Little Caesars for 5 bucks?" Because, truly it is so easy, the kids love to help and it is ten times better than any take out! Here is the recipe if any of you guys are interested in giving it a shot!
1 cup warm water
1 tsp sugar
1 Tbsp yeast
2 1/2 cups flour
1 tsp salt
1 Tbsp oil (olive oil if possible)
Mix sugar with water, then sprinkle yeast over the top. Let soften about 3 minutes. Then add salt, flour and oil. Knead for 8 minutes. Or, just let the Kitchen aid run on low for about 5 minutes. For thick crust, let dough rest for 10 minutes. For regular crust spread a little oil on pizza pan and press to the edges. I use a stone pizza pan but any pan will work. You can also sprinkle cornmeal on the bottom of the pan for an extra yummy taste! Press the dough out to the edges and then add the toppings. I like Contandina pizza sauce, and mozzarella. This time we added pepperoni, canadian bacon, green peppers and olives. Add whatever toppings you like! Bake at 400 degrees until bottom of dough is light brown. 15 to 20 minutes. Enjoy! Oh, and sorry for the super corny song.....I couldn't resist! The kids love dancing to it!

Emma's first day of Kindergarten



Emma started Kindergarten today! I can't believe my little girl is old enough to go to school! She has been so excited to go, counting down the days since the beginning of summer! Today, I got her dressed in her new outfit that Grandma bought her, and the new shoes Daddy picked out. She was practically bouncing off the walls with excitement. Thank goodness she has morning kindergarten. I think it would have killed her to wait for the afternoon! We took pictures outside and she had fun doing a million different poses in her new "big girl school clothes". We walked to school and as soon as it was in sight she said, "Bye mom!" I told her I was going to walk her up to the flag ceremony and then she could see her teacher. She was so excited when the ceremony was over and started to go giving me a quick kiss. Brett yelled, "Emma!" as soon as she ran off and she came back and gave him a kiss. Then she ran right up to the front of the line to follow her teacher to class. I didn't think I would cry, but I did a bit walking home thinking of how fast she has grown up. Time really does speed by and now my little girl is starting school! I saw Mamma Mia a few weeks ago and loved this song, it definitely describes how I am feeling today!
I got this idea from a friend to ask questions every year at the beginning of school.

What is your least favorite food? The rice you made - the one with yucky things in it
What is your favorite animal? Elephants, giraffes, everything at the zoo!
What do you like to do at home? Help mom, play with Brett and make Savannah laugh
What is your favorite book? I like all my books
What is your favorite place to go? The place with all the rides (Lagoon) Except the scary boat ride (Tidal Wave).
What is your favorite thing to say? I love my family
What do you want to do when you grow up? Play the ball game (volleyball) like on the TV (Olympics)

Sun worshipers beware!!!!



Today Mike had surgery to remove a skin cancer (basal cell carcinoma) off the back of his head. Mike was a land surveyor when he was younger and was always in the sun. He came home this afternoon with this dressing on. I teased him that it looked like someone who had some plastic surgery done, or lipo sucked from his chin with the huge pressure dressing on! When the kids woke up from their nap I warned them saying, "Daddy had an owwie and had to go to the doctors to take it off. Now he has a bandage on." Emily immediately began bawling and Brett cried saying, "But, I love my Daddy!" It was so cute. Em started bawling more when she saw Mike and he just had to laugh. They both gave him a big hug. I am thankful for our health and that everything went well with the procedure and that it wasn't melanoma. Tomorrow he is going to go into work like this ~ good luck Mike! :)

Lagoon!!






A few weeks ago we went to Lagoon on Stake Lagoon Day. We had so much fun! Mike and the kids got a pass and I just walked around with Savannah. It was easier that way since she is so small. Right when we got there the kids went on the merry-go-round and then went on the Terror Ride. Mike said they were both pretty scared, but the two "scary rides" were their favorites and they went on them a few times. Brett wanted to try the "boat ride" , the Tidal Wave. I told Mike I didn't think it was the best idea since I probably didn't go on it until I was in High School ~ Yep, I am a wimp! But, he took Em and Brett on it and Em screamed the whole time! She also screamed on Puff the Magic Dragon, Mike and I were laughing so hard! It was quite the sight to see her holding on to Brett the whole time in pure terror while he was just grinning and loving it! They both loved the Rattlesnake Rapids and of course all the kids rides. We hadn't been to Lagoon for such a long time, and so much has changed! There are a lot of new roller coasters and new kid rides; but, much had stayed the same. There was still Bulgy the whale, the flying aces and the little boats in the water - all of my favorites when I was little. We will have to go back next year for some more fun!

Camping at Trial Lake

We left to go camping with Mike's family last Wednesday night. When we got to our camp site we saw that it had rained earlier and quickly set up our tent. The next day it rained, no - poured for most of the day. We spent the time either in our tent or the car since it was raining so hard! On Friday it was a good day and only rained for about an hour. We had planned to leave Sunday afternoon but, on Saturday it started to rain and then hail! We decided to pack up in the pouring rain and head home. The next day we had to set up all of our stuff so it could dry! The weather was really disappointing, but other than that we had a fun time. Cheryl and Sheri planned some fun carnival games, and the kids loved winning prizes. We were right by the lake so we were able to fish, Kayak and throw rocks. It was awesome having the lake so close! Hopefully next year it will be better weather when we camp, if we decide to ~ right now renting a cabin sounds pretty good to everyone!
